I have installed Redhat 8.0 and all went well. I included in the install KDE as well as gnome.
My first question is how do I change it so that KDE is my default shell. I am stuck with gnome at the moment and want to be able to play with both.
My second question is: when I did the install I dont remember being asked for a host name. Is there one? if so how do I change it?

Right I now know how to set the host name when I install, but does anyone know how to change it once Redhat is setup?

With Gnome/KDE Switching, redhat probably has a little app that will switch them, or maby you could do it through linuxconf.
For your hostname, use a text editor and edit /etc/hostname.
Both of these, with a stock install, should be able to be changed via linuxconf
